A funky taco joint in Palm Beach? It’s happening this fall, says Miami’s Coyo Taco, the casual restaurant concept launched two years ago in the city’s hot Wynwood district.

Coyo Taco, which also operates a location in Miami’s Brickell neighborhood, plans to open at the Royal Poinciana Plaza in Palm Beach, according to a restaurant statement. The plaza also is home to the newish Sant Ambroeus restaurant and bar as well as to the island’s popular Palm Beach Grill. Coyo plans to slip into a space formerly occupied by a hair salon.

The Mexican street-food restaurant takes its name and Boho inspiration from Mexico City’s Coyoacán borough, birthplace of artist Frida Kahlo. Colorful Coyoacán also home for Coyo Taco co-founder Alan Drummond. In 2015, he joined partners Sven Vogtland and executive chef Scott Linquist in launching the relaxed concept.

What to expect: scratch-made tortillas, tacos piled with authentic ingredients such as cochinita pibil (slow roasted pork), pulpo (octopus), nopales (grilled cactus), huitlacoche (mushroom-like corn fungus), duck “carnitas,” and al pastor pork and chicken. Also burritos, quesadillas and fresh guacamole.

“The team at Coyo will create new menu items exclusive to this location incorporating locally sourced ingredients that fit with the local flavors of Palm Beach,” says the restaurant’s news release.

The proposed 80-seat Coyo Taco will serve lunch and dinner daily. Its proposed hours are late by Palm Beach standards: open to 1 a.m. Sunday through Thursday and to 2 a.m. on Friday and Saturday.

But the restaurant has hurdles to clear before it opens. According to the Palm Beach Daily News, Coyo Taco requested an additional 59 seats (from the now-closed Michael R. McCarty’s). Its current space grants Coyo just 21 seats. The Town Council votes on the matter Wednesday. If they approve Coyo’s request, the McCarty’s space would be left with 92 seats, the Shiny Sheet reports.
