DC-Based Mediterranean Restaurant Cava Will Open Four Locations in the Boston Area

More fast-casual Mediterranean restaurants are on the way to Boston, courtesy of a Washington, D.C.-based company. Cava, both a restaurant and prepared foods business, plans to open four locations in the Greater Boston area, starting in January 2018.

 

Childhood friends Ted Xenohristos, Ike Grigoropoulos, and executive chef Dimitri Moshovitis founded Cava and have worked with CEO Brett Schulman to build the company to its current state, where it stands poised to operate 45 locations across the country by the end of 2017.

 

Earlier this year, Cava received $30 million in funding for an expansion, which the company is putting to work with its growth to Massachusetts, which includes two restaurants in Boston proper, one in Hingham, and one in Dedham. The Fenway restaurant will open in January at 1350 Boylston St., followed by Dedham (680 Legacy Pl.) and Hingham (98 Derby St.) in February, and Back Bay (667 Boylston St.) later in the year. The Back Bay location will have an outdoor patio.

 

Cava’s customizable menu features bases that come with assorted toppings, proteins, and dressings. Starting with salad, grains, pita, or a mix of greens and grains, diners then choose from three spreads, including feta mousse, then add protein (like falafel, grilled meatballs, or braised lamb), vegetables, and dressing.

 

In addition to the restaurant arm of the business, Cava also distributes packaged products, including assorted dips and spreads, which are available at Whole Foods Markets in select parts of the country, including the East Coast.
